One of the most famous and important streets in all of Barcelona, Passeig de Gràcia is home to Antoni Gaudi architecture, designer shops, and the prestigious 5-star luxury hotel Casa Fuster. In 2008, while filming Vicky Christina Barcelona, Woody Allen frequently played jazz with local musicians in Casa Fuster’s downstairs lobby lounge, Café Vienes. The jazz night became so popular among locals that the hotel continued to offer exclusive performances for hotel patrons and locals alike on Thursday nights, creating a new staple for Barcelona’s weekday nightlife.

Casa Fuster’s Galaxó Restaurant

MiLLENNiAL was invited to experience the avant-garde cuisine of Casa Fuster’s gastronomic restaurant, Galaxó, led by millennial Executive Chef Markel Aguirre. All dishes were inspired by his Northern Spanish roots and filled with unique colors that reflected Barcelona’s famous modern architecture.

Our table received a selection of high quality olive oils served with an array of specialty salts, accompanied with a freshly baked raisin brioche and butter onion baguette.

As a starter course, the chef prepared a fish gill soup, a traditional dish native to Northern Spain. The soup was soon followed by the first appetizer – mini aubergines with bergamot mayonnaise. Perfectly plated to showcase bite sized nibbles, the aubergines melted when cutting into them, oozing with the bergamot mayonnaise sauce.

Next was a marinated fresh salmon with Yuzu cream, cava gel, and roe. The plating alone was something that was painful to destroy, but well worth the bite of delicate seafood. Edible flowers not only served as a beautiful way to decorate the plate, but also enhanced the taste of the fish. For the meat dish, Chef Markel prepared a grilled Angus tenderloin steak with carrot and sweet potato purée.

Dessert was specially crafted to celebrate the legend of Barcelona’s St. George. A lemon and yogurt mousse with stewed pears, thyme and honey jelly was infused with a grenadine sauce. Legend has it that St. George slayed a dragon and out of the dragon’s blood grew a rose. Now on April 23, Spain honors this holiday with the act of men presenting a red rose to women, and women offering men a book.

This dessert was beautifully conceptualized with the grenadine placed in an eye dropper to slowly drip the red alcohol (representing the dragon’s blood) into the lemon and yogurt mousse, making for a tremendous ending to one of the best lunches we had ever experienced.
