Appetizer of the Week: Tomato Basil Soup

A long time favorite of Americans, tomato soup was once considered a staple food of the poor. Made famous by Campbell Soup Company in the late 19th century, it was condensed and packaged in a can; and preparation was as easy as loading it into a pot, adding water, heating, and stiring. Viola! Dinner was served.

But as time went on, tomato soup evolved into much more than a liquid companion to the grilled cheese sandwich. Today chefs of all cuisines prepare and serve variations of the appetizer. From Minestrone to Gazpacho, you will be hard pressed not to find a version on the menu at your favorite restaurant- especially on a Monday.

Tomato Basil Soup is a specially seasoned variety of the old standard, and it provides the perfect solution to your fall craving.
